In-line with our theme of vegetarianism, we’re putting out a series of simple vegetarian/vegan meals and desserts that you can make yourself at home. This simple dessert is vegan and gluten free and can be eaten on its own or with some cream/ice cream. Perfect for a cozy night in the winter months.
Serves 12
Ingredients:
Crumble:
- 1 1/2 cup rolled oats
- 3/4 cup chopped walnuts
- 6 tbsp coconut
- 6 tbsp oil
- 1 1/2 tbsp water
- 6 dates, pitted
- 3/4 tsp salt
Filling:
- 1 kg apples (after peeling and coring)
- 1/4 cup sugar
- 3/4 tsp nutmeg
- 2 tsp cinnamon
- 1/4 cup lemon juice
Method:
1. Prepare the filling by slicing the apples and mixing in the sugar, nutmeg, cinnamon and lemon juice. Allow to sit for 30 minutes to an hour.

2. Combine the oats, walnuts and coconut and set aside.
3. Blend oil, water, dates and salt in a blender and add to the dry ingredients. Mix well until crumbly.

4. Add the filling to an oven-proof dish and top with the crumb mixture.

5. Bake at 180°C (356°F) until apples are heated through and the top is golden brown. Serve warm on its own, or with cream/ice cream.
